Robin Wickens presents Big Green Egg

Australian nature-based

The Royal Mail Hotel, Dunkeld is one of Victoria’s premier regional escapes. Located at the southern tip of the spectacular Grampians National Park, the Hotel offers a one-of-a-kind experience with award-winning dining, quality accommodation and a selection of wine and nature-based experiences all set against a stunning Victorian backdrop.

The Royal Mail Hotel is renowned for its highly acclaimed dining offerings that are a reflection of Dunkeld’s micro-climate and the exceptional produce growing capabilities of the Royal Mail Hotel Kitchen Garden, the largest working restaurant kitchen garden in Australia. In 2017, its award-winning Dining Room – which held Two Chef Hats by the Age Good Food Guide 2015, 2016 and 2017 – and Parker Street Project underwent a major transformation; the Dining Room became a space for casual dining and a new restaurant, Wickens at Royal Mail Hotel, was built on a new location on the property, Providing even great culinary scope for Executive Chef Robin Wickens.

The Hotel’s cellar houses one of the most comprehensive and varied wine collections in Australia, including one of the country’s leading collections of Bordeaux and Burgundy. A selection of 2300 local and imported wines is offered from a wine inventory of 28,000 bottles. In 2016 the wine cellar was updated to include a tasting room, so guests can tour the extensive collection, learn about the collection and take part in a series of comparative tastings using pours of local and international red and white wines.

All overnight guests are offered a complimentary Kitchen Garden Tour at 11am daily. Conducted by the Royal Mail Hotel’s chefs, the tours demonstrate to guests the organic practices employed by the Hotel and how the daily harvest influences the menu. The driving philosophy behind the Kitchen Garden is that food should be produced using organic principles with as little impact to the earth as possible. The garden aims to provide produce such as organic vegetables, herbs, edible flowers, fruit and nuts all year round.
