Morgan McGlone’s Berry Cobbler

Ingredients

  • 1kg mixed frozen berries (Blueberry,Rasberry,strawberry)
  • 5 lemons zest of 4 + juice of 5
  • 1 vanilla Bean
  • 2 cups castor sugar
  • 1 pinch of salt
  • 1 small tub of crème fraiche
  • Icing sugar for dusting
  Batter Mix:
  • 6 tablespoons Butter
  • 1 cup plain flour
  • 1 cup castor sugar
  • 2 tablespoons baking powder
  • ¼ tsp salt
  • ¾ cup whole milk
  • ½ tsp mixed spice

Method

  1. Preheat oven to 180 degrees Celsius
  2. To make lemon syrup garnish add ¾ lemon juice and zest to 1 cup of sugar and ¼ cup of water. Bring to the boil and reduce by half. Allow to cool.
  3. Slice butter into pieces and add to baking dish, place pan in the oven to melt butter.
  4. Mix berries, sugar , salt and lemon together in a medium bowl.
  5. In a separate bowl mix batter ingredients together do not over work this batter.
  6. Pour berries over melted butter and then drizzle over batter to the berries.
  7. Bake at 180c for 35-40 mins
  8. Dust well with icing sugar and serve with Crème Fraiche and lemon syrup.
