Charlie Carrington

Born in 1993, Charlie Carrington is an earnest young chef with a fascination for food from all over the planet.

Carrington was introduced to the culinary world by his grandmother’s sister, who was an exceptional home cook with an affinity for delicious dessert creations.

Determined to start early, Carrington left high school in Melbourne at the age of 16 and ventured to London for a three week stage at the three Michelin starred Restaurant Gordon Ramsay.

Gordon Ramsay and his former head chef Clare Smyth were an incredible inspiration to Carrington during his stint.

Following his training at Ramsay’s eponymous restaurant, Carrington returned to Melbourne and joined the team at Vue De Monde in Melbourne before heading to Sydney to work under Mark Best at Marque where he finished his apprenticeship and then Lennox Hastie’s Firedoor after his international travels .

With the ambitious idea to open his own restaurant, Carrington embarked on an eight-month research trip spanning 15 countries across South America, North America, Europe and Asia.

Carrington gained experience working in kitchens in Antwerp, San Francisco, Bangkok, Singapore, La Paz, Mexico City and Sao Paulo.

During this time Carrington dined at a number of restaurants on his bucket list and now counts Relae in Copenhagen and Le Chatieubriand in Paris as his top two dining experiences.

Upon his return to Australia, Carrington began the search for a location of his own in sydney, After multiple failed attempts with finding the right site, He left Firedoor for his home town of Melbourne, On the 4th of April 2016 he signed the lease for the current Atlas Dining location and in September 2016, opened Atlas Dining on Commercial Rd, South Yarra.

The Atlas Dining food and beverage menus will be transformed three times per year based on Carrington’s travel experiences. The first cuisine is Vietnamese, which is on offer until the end of December 2016 followed by Israeli, Korean and Mexican.

They received one hat in there first year, Won best new restaurant from time out and Charlie was nominated as the best new talent by Gourmet Traveller.
